Ingredients

  1. For chole
  2. 1 cupchole
  3. 3tomato puree
  4. 2cloves
  5. 2tej patta
  6. 2cardamom
  7. 1/2 tbspginger paste
  8. 1green chilli
  9. 1small dalchini tukda
  10. 2 tbspcoriander powder
  11. 1 tbspkashmiri red chilli powder
  12. 1/4 tspturmeric powder
  13. 1/2 tbscumin seeds
  14. 1/2 tsproasted cumin powder
  15. 1 tbspkasuri methi
  16. 1/2garam masala
  17. to tasteSalt
  18. 2 tbspoil for cooking chole
  19. For tikki stuffing
  20. 1 cupfresh green peas
  21. 1green chilli
  22. 1 tspginger paste
  23. 1/2 tspcumin seeds
  24. 1 tbsoil
  25. 1 tbscoriander powder
  26. 1/2 tspamchoor powder
  27. 1 tbssattu (besan)
  28. Pinchasafoetida
  29. For Aloo tikki
  30. 1/2 kgpotatoes
  31. 3green chilli
  32. 1 tbsChat masala
  33. 1/2 cupfresh chopped coriander
  34. to tasteSalt
  35. 1/2 cupspicy green chutney
  36. 1/2 cupkhatti meethi tamarind chutney
  37. 1/2 cupnylon sev
  38. 1/2 cupchopped onions

Steps

  1. 1

    Soak chole overnight and cook for 10 to 15min giving 8 to 10 whistle in cooker adding salt as needed for the chole quantity

    Now heat the oil in kdai.Add tej patta, Jeera, Kala jeera,when splutters add clove, dalchini and elaichi. Then add tomato puree. Ginger paste and green chilli. Add dhania powder, haldi, red chilli powder and little salt.Cook till masala leaves oil. Add cooked chole and give a good mix.... Add water a adjust the consistency according to need. Cook till chole gets denser.At last add 1tbs crushed Kasuri methi and Garam Marsala

    Ur chole r ready for chatt

    For stuffing grind the fresh peas fine. Heat oil. Add jeera and heeng.then add peas paste. Add all the dry masala and make a spicy filling adding dhania powder, ginger green chilli paste,garam masala. Lastly add sattu so that sogginess goes away.ur green peas stuffing is ready

    For making tikkia boil potatoes. Mash or grate them evenly so that tikkias r made evenly add all the spices and make a smooth dough like

    Now grease ur hands with oil and make tikkis filling the peas stuffing in middle

    Now heat the griddle and cook the tikkis golden brown from both sides adding little oil on sides. Press them gently. And cook tikkis r ready for plating

    First keep the tikkis.spread both chutney on it.then chole.then grated carrots bhuna jeera salt.add again both the chutney.garnish with chopped onions, nylon sev,pomegranate Daane and green coriander..
