One of my favourite Vegetables. I can never tire eating brinjal. Be it baingan ka bharta, baingan ke pakode, baingan fry or just in salads. Benefits are unlimited. Rich source of iron, vitamin C, fiber, nutrients, high in antioxidant, maintains weight loss, controls blood sugar, etc.

Steps

Chop the brinjal into half lengthwise and then cup them into 3 pieces.

Steam the brinjals for 10 minutes. Remove and roughly shred them into 2 to 3 pieces.

Slightly roast the garlic and crush them. In a bowl mix the crushed garlic, soy sauce, olive oil, coriander leaves, chilli flakes and onion. Add the brinjal to this and mix well. You can check and add salt if needed.
