Ingredients

  1. 300 gsweet potato
  2. 1small red pepper
  3. 2garlic cloves crushed
  4. 1x 400g tin chopped tomatoes
  5. 1 tspchilli powder
  6. 1 tspground cumin
  7. 1 tspground coriander
  8. 1x 400g can of black beans drained and rinsed
  9. 100 gbag of spinach
  10. Coconut yoghurt

    Peel sweet potato and chop in to 2cm pieces

  2. 2

    Chop red pepper into pieces of the same size discarding seeds

  3. 3

    Place the sweet potatoes and red pepper into a large saucepan with the canned tomatoes and 600 mils of boiling water, and bring to the boil

  4. 4

    As it boils, add the garlic, chilli powder, cumin, coriander salt and pepper. Reduce the heat to a simmer, put the lid on the pan and let it cook for around an hour stirring now and then

  5. 5

    Add the black beans to the stew with the spinach and yoghurt and stir until the spinach has wilted. Delicious served with pitta bread or mashed avocado.

There's nothing I love more than a full table, family and friends eating together , and although many of my dishes may be simple ( and still eaten by my children with a large dollop of ketchup) they are often my own little twists on everyday winners cooked with love
