Ingredients

  1. 2 poundslean groundbeeg
  2. 2shallots, minced
  3. 2garlic cloves, minced
  4. 1 teaspoonblack pepper and
  5. 1 teaspoonKrazy mixed up salt blend
  6. 1 tablespoonketcup
  7. 1 teaspoondijon mustard
  8. 1 teaspoonworcheshire sauce
  9. 1 teaspoonhot sauce, such as franks red hot
  10. 8 ouncesgarlic and herb cream cheese, I used Bourrsin brand
  11. 16 ouncessharp cheddar cheese, shredded
  12. 1 tablespoonolive oil
  13. 1large egg beaten with 1 tablespoon water (egg wash)
  14. about 20 egg roll wrappets
  15. about 3 to 4 cups canola oil for frying
  16. For Serving

Cooking Instructions

    In a large skillet heat olive oil and add shallots and garlic and soften, about 2 minutes

    Add ground beef, and brown, add pepper, Krazy salt ketcup, mustard, worcestershire sauce, and red hot and mix well

    Mix in garlic and herb cheese and cheddar to blend well and cool. I forgot to get a photo of this!

    Make eggrolls

    Lay an egg roll wrapper flat on work surface

  7. 7

    Brush all edges with egg wash

  8. 8

    Roll up about 1/4 cup filling into wrapper, folding in sides to enclose filling completely

    Heat oil in a large pot or dutch oven to 350. Add egg rolls, just a couple at a time and cook until golden turning once

    Drain on racks

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
