Ingredients

  • For the dough:
  • 3 cupsflour (about 375 grams)
  • Pinchsalt
  • 3 tablespoonsplain yogurt (about 45 grams)
  • 1 tablespooninstant yeast (about 10 grams)
  • 1 tablespoonsugar (about 12 grams)
  • 1 tablespoonoil (about 15 ml)
  • Warm water for kneading
  • For the meat topping:
  • 5large onions
  • 1 teaspoonblack pepper (about 2 grams)
  • Salt
  • 1 poundground beef or lamb (about 500 grams)
  • 5 tablespoonspomegranate molasses (about 75 ml)
  • 3 tablespoonsplain yogurt (about 45 grams)

Steps

  1. 1

    Mix the dough ingredients with warm water until you have a soft, non-sticky dough. Cover and let it rise until doubled in size.

  2. 2

    Peel and wash the onions. Finely chop them in a food processor. In a bowl, combine the ground meat, chopped onions, black pepper, salt, pomegranate molasses, and yogurt. Mix well, then refrigerate until the dough is ready.

    Divide the dough into small balls. Roll each one out thinly. Lightly grease a baking sheet with vegetable oil. Place the rolled dough on the sheet, spread the meat mixture evenly on top, and bake in a preheated oven until the bottoms are golden brown.

  4. 4

    After removing from the oven, cover the sfiha with a clean towel to keep them soft. Serve with yogurt on the side. Hope you try it—it's delicious!
