An Amazigh recipe made with turnips and their greens. Delicious and healthy, it's a perfect dish for cold weather.
Steps
- 1
Wash the turnip greens thoroughly, chop them, and wash them again well. Cut the vegetables into small cubes.
- 2
Place all the ingredients in a pot, add enough water to fill halfway, then add salt, black pepper, and olive oil. Cook over heat.
- 3
Meanwhile, prepare the couscous by sprinkling it with water until it absorbs, then add salt and olive oil. Fluff it well so it absorbs the water, then place it in a couscous steamer (a pot with holes).
- 4
Steam the couscous three times, each time for 20 minutes or until the steam rises well, sprinkling with water and letting it absorb between each steaming.
- 5
Shortly before it's done, add the hot pepper. This step is optional.
- 6
To serve, mound the couscous on a plate, pour the broth over it, add the hot pepper and a little olive oil. Serve with plain yogurt. Enjoy!
- 7
If you can't find turnip greens in your country, you can grow the greens from turnips as shown in the picture. I tried it a week ago—they need to grow larger and will look similar to Swiss chard leaves when mature.
