Easy gingerbread mini cakes
Best ever mini cakes! And... it’s almost all store bought! So easy!
Steps
- 1
First... make your cake mixes (in separate bowls) bake cakes.
- 2
In a large bowl, melt white chocolate until it’s a thick ganache. Add yellow gel food coloring to the white chocolate ganache until it’s a bright emoji yellow.
- 3
In another separate large bowl, add white buttercream and then mix in yellow gel food coloring. Note: I did each container of buttercream in two separate bowls then I added them together. Don’t add a lot of food coloring at 1 time. It will taste bad. If you need to use a lot of food coloring like I did, then add it slowly.
- 4
When cakes are cooked and cooled, out 1 cake on a clean counter. On top of that cake spread your yellow buttercream (thick)
- 5
Knead fondant until nice and soft. Roll it out.
- 6
Make small balls (representing eyeballs) (this part took me 40 minutes.) note: you will want to make pairs of your eyeballs for later.
- 7
Okay!! Now you need to make little smiles for your upcoming little friends! Roll out fondant. Make little banana shapes (for the smiles)
- 8
(Your probably exhausted) lol I am too. But... carry on!
- 9
Okay! Put your other cake on top of your buttercream cake! (Make sure your both cakes are cooled.)
- 10
On the top cake add butter cream (if desired) (I didn’t)
- 11
Take your cookie cutters and poke them into your cake. Then cut the shape out with a knife
- 12
Coat the squares with the ganache
- 13
Decorate with the fondant, cool, and enjoy!
