Pre-heat the oven to 350°F. Line a 12 muffin tray

In a bowl sieve the dry ingredients, flour, baking powder and salt together.

In another bowl beat together butter/margarine with sugar until soft and fluffy.

Add in an egg at a time and beat well to avoid cuddling. Add in the vanilla essence.

Add half of the flour and milk and beat in until mixed. Add the rest of the flour and milk together with the oil and mix well

Divide the batter in two halves. To one half add the coffee sachet and mix well.

Scoop into each the muffin cups half of each batter i.e half cup without coffee and half with coffee..

Bake for 12-15 minutes at 350°F

Serve with warm milk or tea or as desired
