This is my mother's recipe. I love her, and since she works so much, she can't always cook for us. She taught me how to make it, and now I get to treat her to this dish.

Boil all the meat and pork skin together with salt, garlic, and the half onion.

When the meat is halfway cooked, add the precooked hominy and let it cook for a while longer.

Meanwhile, cook the chiles, then blend them with the oregano. Once blended, add the mixture to the pot and continue cooking everything together.

Check the salt, make sure the meat is tender, and the hominy is fully popped and soft.
