Ingredients

Serves 8 servings
  • 1 can(about 25 oz/700 g) precooked hominy
  • 1.1 lbs (500 g)pork neck bones
  • 1.1 lbs (500 g)pork loin
  • Pork skin, to taste
  • 5-10dried guajillo chiles
  • 1 headgarlic
  • 1/2white onion
  • 1small handful of dried oregano
  • Salt, to taste
  • For serving:
  • Shredded cabbage or lettuce, to taste
  • Chopped onion, to taste
  • 1chili oil salsa

Steps

  1. 1

    Boil all the meat and pork skin together with salt, garlic, and the half onion.

  2. 2

    When the meat is halfway cooked, add the precooked hominy and let it cook for a while longer.

  3. 3

    Meanwhile, cook the chiles, then blend them with the oregano. Once blended, add the mixture to the pot and continue cooking everything together.

  4. 4

    Check the salt, make sure the meat is tender, and the hominy is fully popped and soft.

  5. 5

    Done! Enjoy!
