Irish Potatoes and Noodles Jollof

One of the days where I just sit and think bout possible food combos. I don't like boiled Irish, but then, I had some and thought of how I can enjoy it with less stress and ingredients. Then the thought of making it with noodles came to mind and it turned out perfectly nice and gets your taste buds wanting more. You should try it out.
Irish Potatoes and Noodles Jollof

Steps

Peel the potatoes, wash and cook. Drain and set aside

Parboil the noodles till its half done, wash off the starch and set aside

In a pot, add in little oil and heat up for a bit. Put in the chopped onions and peppers and stir fry for 2mins

Add in the seasonings and spices of choice. Stir together, add in a little water and allow to boil untill there's little to no water in the pot

Add in the potatoes and noodles, stir together, cover the pot and allow to simmer for a few minutes.

Put down, serve and enjoy.

Note: I didn't use any spices for mine. Wanted to get that original taste from the potatoes, which I did and I was glad I used less ingredients and spices for it
