Start by peeling potatoes with potato peeler, cut into moderate bits and wash neatly

Wash all the veggies and cut into chunks. Cut the chicken in chunks too.

On a medium heat, place a pot pour a cup of water. Add the chicken stock to the water and that will be enough to cook the potatoes, add the potatoes.

Next, add curry powder, thyme, seasoning cube, paprika, scotch bonnet, turmeric powder, salt to taste and stir. Cover the pot and allow to cook for 15 - 20 minutes until your potato is cooked basically.

While the potatoes is cooking, place a frying pan on medium heat, add the vegetable oil to heat up a little. Then you stir the veggies; first sauté the onion, add garlic and ginger minced, add the green, red and yellow bell peppers and carrot, continue to fry

Next, add the chunk chicken into pan and stir fry for another 1 minute

After stir frying the veggies, you pour all veggies into the cooked potatoes and stir all together.

Food is served, Enjoy with any side drink of your choice
