Chicken, Tomato and Mushroom Pasta, in Honey, Lemon and Whole Grain Mustard dressing
My “ packed lunch “ for an outdoor First Aid Course I am on, Day one!!

Cook the Pasta to packet instructions, drain, and rinse with cold water, leave to cool down to cold.

Meanwhile, pull apart the Chicken, discarding bones skin and anything else not eatable. Chop into small pieces. Add to a mixing bowl.

Wipe, then dice, the Mushrooms into small pieces, add to bowl.

Wash if needed, then slice and dice Tomatoes into small pieces, add to mixing bowl, along with the peas.

Put the Mayonnaise into a cup, add 1 teaspoon Honey, 1 Teaspoon Whole Grain Mustard, and a little Lemon Juice. Mix well and taste. Add more Honey and / or Mustard and / or Lemon Juice to taste.

Add dressing to mixing bowl and stir well, making sure everything is well coated. Place into container of choice.

Keep refrigerated, if possible, until time you wish to eat it. Please send a Cook snap if you try it!!

Can be made with Ham or Beef if preferred. Do not freeze, as Pasta is a bit “ rubbery” after freezing..
