Ingredients

20 biscuits
  • 250 gplain flour
  • 30 gcocao
  • 3/4 tspbaking powder
  • Pinchsalt
  • 150 gbutter
  • 1thumb ginger root
  • 2 tspground ginger
  • 3 tspcinnamon
  • 1/2 tspground cloves
  • 1/2 tspnutmeg
  • 100 gdemarera sugar
  • 25 gmaple syrup
  • 1medium egg

Steps

  1. 1

    Melt the butter in a pan and then add finely diced ginger root,sugar and syrup. Warm gently for a few minutes, then add remaining spices.

    Remove from heat, allow to cool for 2-3 min and then beat in the egg.

    Sift together flour, cocao, baking powder and salt, and stir in to the butter mix.

    Roll the dough into a 5cm thick sausage and slice into 1cm disks

    Bake at 180°C for 15 minutes

These would benefit from a touch of lemon icing, as to my taste they are not quite sweet enough.
