We all like a cheeky midnight snack when we can't sleep, get home from a late night or busy shift. This is a timeless classic and involves all the essential midnight snack ingredients.... Carbs, oil and cheese.

Using a madeline to slice your potato into wafer thin slices (about 1-2mm thick) and great your cheddar.

In a frying pan over a medium heat layer your sliced potato to cover the bottom of the pan. Add a layer of cheese and then a layer of potatoes repeat until your finally cover with cheese. Fry for about 5mins then flip and fry cheese side down for 5 more mins.

Finally when cooked through and the cheese and potatoes are crispy, turn out onto a plate and season. Best enjoyed at midnight after a few beers.
