Pumpkin soup

Pumpkin usually a disliked vegetable, has many health benefits.It is a rich sauce of various vitamins like vitA, vitC, vitE and vit B12. It's an antioxidant which helps to fight many diseases and fights ageing. It's fiber rich texture is good for healthy bowels. It's very good for eyesight and boosts immunity. Also it's low calorie makes it ideal for weight watchers. Children usually dislike pumpkin but would surely love this soup. It's a hot favorite of my favorite of my family.

Steps

Heat 1tsp butter in a pan and add chopped garlic. Saute till nearly burnt and golden brown. Transfer to a bowl.

In a pressure cooker heat 1 tsp of butter and saute pumpkin and carrots till slightly brown. Add tomatoes and little water. Pressure cook to 2 whistles. Cool and blend in a blender.

Transfer the paste to a saucepan and add 3 cups of water. Add salt and pepper and cook for few minutes.

Add burnt garlic and cook for another 2 minutes. Serve garnished with coriander and lemon juice. Goes well with toasted bread.
