Prepare the syrup by simmering the sugar and water until it thickens to a syrupy consistency. Set aside to cool.

Mix all the cake ingredients together and pour the batter into a baking pan. Bake in the oven until golden and cooked through.

Once baked, pour the cooled syrup over the hot cake and sprinkle with shredded coconut to decorate.
