Mix the dry ingredients together with the vanilla and orange blossom water or pistachio essence. Stir well, then add the melted (not hot) butter and rub it in thoroughly.

If needed, add a little milk or water to bring the dough together, but don’t add too much so it doesn’t dry out. If the dough is still dry, you can add a bit more butter. Let the dough rest for about 15 minutes.

Prepare the date paste by kneading it with a little ghee until it becomes very soft. Shape into small balls about the size of a hazelnut. Take a piece of dough, flatten it, make a small indentation with your finger, place the date ball inside, seal it, and shape using a maamoul mold. Place on a baking sheet.

Bake on the middle rack of a preheated oven at 340°F (170°C) for 30 minutes.
