Ingredients

4 servings
  • 1large bag of Mixed greens
  • 2avocado
  • 2 Handfulwalnuts
  • 2large Sweet potato
  • 2-3apples
  • Salt and pepper
  • Olive oil
  • Blackberry (optional)

Steps

  1. 1

    Preheat oven to 425. Peel the sweet potato and dice into small cubes. Mix it in a bowl with olive oil and salt and pepper.

    Bake the sweet potato cubes at 425 for 40 min. Or till you see it is soft and a little crispy on the sides.

    Dice the avocado. Peel and dice the apple too.

  4. 4

    Crush the walnuts lightly by hand. Once sweet potato is baked, I turned down the oven temperature to 350 and use the same foil to toast the walnuts (add a little olive oil to the walnuts)for 9-10 minutes.

  5. 5

    Mix all the ingredients in one big bowl. Add olive oil as dressing and additional salt and pepper to your liking. I add blackberries at the end, just because I had some in the fridge.
