Pea and spinach pesto

In a bowl pour hot water over peas to blanch. Strain peas.

Squeeze lemon and use juice. You can add zest to the pesto

In a blender or food processor (or with stick blender) blend spinach, peas, olive oil, mayonnaise, lemon juice and season with salt and pepper. You can make it are fine as you like.
