Ingredients

60 minutes
  1. 8 cupsflour (about 1 kg)
  2. 1 3/4 cupsmargarine (about 400 grams)
  3. 7 ozvegetable shortening (about 200 grams)
  4. 6eggs
  5. 3/4 cupmilk (200 ml)
  6. 1 1/2 cupssugar (about 300 grams)
  7. 1 packet(2 1/2 tsp/11 grams) active dry yeast
  8. 1 tspvanilla extract
  9. 2 tbsppowdered milk
  10. 2 tspsalt (10 grams)
  11. 1/2 cupwarm water
  12. Concha topping dough:
  13. 1 1/3 cupsvegetable shortening (about 300 grams)
  14. 2 1/2 cupsflour (about 300 grams)
  15. 2 1/2 cupspowdered sugar (about 300 grams)
  16. Food coloring and flavoring, as desired

Steps

60 minutes
  1. 1

    Dissolve the yeast in half a cup of warm water with two tablespoons of sugar and one tablespoon of flour. Let it sit until it becomes foamy.

  2. 2

    Make a well in the flour and add the yeast mixture, eggs, and milk.

  3. 3

    Knead until the dough starts to come together, then gradually add the sugar while kneading. Next, add the powdered milk and knead until fully incorporated.

  4. 4

    Add the vegetable shortening and margarine, and knead until the dough pulls away from the sides. Let the dough rest until it doubles in size.

  5. 5

    Divide the dough into 2 oz (60 gram) balls, let them rest, and decorate with the topping dough.

  6. 6

    For the concha topping: Mix all the ingredients together until you have a smooth dough. Divide into equal portions and add food coloring and flavoring as desired.
