Pasta with Tuna

My father-in-law made this recipe for us several years ago. I wasn't sure that I would like tuna in tomato sauce, but found it to be quite tasty. It is a nice change from traditional meat sauce and is quick and simple to make. You can add or substitute other vegetables depending on what you have in your kitchen. I often add chopped red pepper.

Ingredients

4 to 6 servings
  • 1-2 Tbspolive oil
  • 1small chopped onion
  • 1/2-3/4 cupchopped baby carrots
  • 1/2-3/4 cupchopped celery
  • 1-2jalapeno peppers seeded and sliced (optional)
  • 1-6 ouncecan tuna
  • 1-28 ouncecan diced tomatoes
  • 1/2 cantomato paste
  • 1 Tbspsugar
  • 1 tspsalt
  • 1/2 tsporegano
  • 1 tspbasil
  • Pasta of choice
  • Parmesan cheese (optional)
  • Crushed red peppers (optional)

Steps

  1. 1

    Saute olive oil, onion, carrots, celery and jalapeno peppers slowly in a large covered saute pan.

  2. 2

    When vegetables are crisp tender, add tuna to pan and saute a bit longer.

  3. 3

    Add diced tomatoes, tomato paste, sugar, salt, oregano and basil to pan and simmer (covered) for 20 to 30 minutes.

  4. 4

    Serve over top of your favourite pasta (I normally use spagetti or penne) and sprinkle with parmesan cheese and/or crushed red peppers if desired.
