Dissolve the tapioca starch in the water. Add the oyster sauce, soy sauce, and white pepper. Stir well, then add the green onions and oysters.

Heat 1 tablespoon of oil in a skillet over medium heat. Once hot, add the eggs and scramble until just set. Add the mixture from step 1 and stir-fry quickly until the batter starts to set.

Add a little oil to the pan, then add the bean sprouts. Season with a splash of soy sauce and stir-fry until just cooked. Transfer to a plate and top with the oyster omelet. Enjoy!
