Ingredients

  1. 3 tablespoonstapioca starch (about 24 grams)
  2. 1/3 cupwater (100 ml)
  3. 1 tablespoonoyster sauce
  4. 1/2 tablespoonlight soy sauce
  5. 15fresh oysters
  6. 2duck eggs
  7. 2green onions
  8. 1 pinchground white pepper
  9. 3.5 ouncesbean sprouts (about 100 grams)

Steps

    Dissolve the tapioca starch in the water. Add the oyster sauce, soy sauce, and white pepper. Stir well, then add the green onions and oysters.

    Heat 1 tablespoon of oil in a skillet over medium heat. Once hot, add the eggs and scramble until just set. Add the mixture from step 1 and stir-fry quickly until the batter starts to set.

    Add a little oil to the pan, then add the bean sprouts. Season with a splash of soy sauce and stir-fry until just cooked. Transfer to a plate and top with the oyster omelet. Enjoy!
