Ingredients

  1. 1 cupKabuli Chanasoaked overnight-
  2. 2Tea bags
  3. 2 tbspGarlic cloves sliced
  4. 1-tbsp + more for garnishingGinger julienne
  5. 4-5Green chilli sliced
  6. 2Onion chopped
  7. to tasteSalt
  8. 1 tspMango powder
  9. 1 tspPomegranate seeds
  10. 1/2 cupTomato puree
  11. 1 tspCoriander Powder
  12. 2 tbspChana masala
  13. 1 tbspJeera-
  14. 1/4 tspTurmeric powder
  15. 1Whole spices -bay leaf
  16. 1Cinnamon stick
  17. 2-3Clove-
  18. 2Black cardamom
  19. 1/2 tspCumin seeds-
  20. For the bhature
  21. 1 1/2 cupMaida
  22. 1/2 cupSuji-
  23. 1 tspBaking powder
  24. 2 tspSugar -
  25. to tasteSalt
  26. -2-3 tbspOil
  27. -1/2 cupCurd
  28. as neededWarm water
  29. as neededOil for frying
  30. as neededFor garnish fried potato, fried green chilli and lemon

Steps

  1. 1

    Turn the heat to medium and pressure cook for about 15minutesor until they are soft discard the tea begs and spices and keep aside

  2. 2

    Pressure cook the soaked chana with the tea begs-2,water,salt garlic cloves and whole spices for 5whistles on high heat

  3. 3

    Heat 2tbsp oil in a pan add jeera add ginger and soute for a minute add onions and saute till the Onion is golden brown add tomato Puree and mix well and all masala powder mix well and cook for 5-6minutes

  4. 4

    Now add masala to the cooked chanaand mix well add some water if needed

  5. 5

    Cook covered over low heat for 10minutes turn off the heat and set aside

  6. 6

    Combine the flour,suji,and all ingredients mix well add curd and mix well knead into a firm dough with water.apply little oil and cover it with muslin cloth.leave for 2-3hours

  7. 7

    Divide it into 7-8equal.portions.roll out into an.round/oval shape

  8. 8

    Heat oil in a pan

  9. 9

    Deep fry till the bhature.puff up and both sides are slightly golden brown

  10. 10

    Garnish chole with fried potatoes,ginger,lemon.and fried green chillies

  11. 11

    Serve chole bhature with green chutney and salad
