In a bowl add all the ingredients with the stock being the last ingredient. Cover with clingfilm and allow the couscous to cook for 10-12 minutes.

Remove the clingfilm and using a fork fluff the couscous.

Next fresh herbs. Mint, chives, parsley, coriander or any other herb can be added. Chickpeas, sun dried tomatoes and other vegetables can also be added to make a meal. However, I added juice of have a lemon and a tsp of freshly chopped mint leaves.
