This recipe was given to me by my sister in law. At first I was sceptical because growing up we only made cakes using butter. However after I tried it, I mostly use this recipe as it is easy to make, stays soft for days and is freezer suitable!

Ingredients

1 1/4 cupflour
1 cupsugar
2 tspbaking powder
3/4milk
Half cupoil
1 tspVanilla essence

Steps

Mix dry ingredients (flour, sugar, baking powder) in a bowl, add all liquid ingredients (milk, oil and vanilla essence) and beat well.. Pour into paper cups and bake 180 degrees for 15 mins.

Cool, serve plain or decorate with buttercream or chocolate sauce. Enjoy!
