De-seed 1 small watermelon and cut it into cubes and refrigerate it for an hour. Or you can use already chilled watermelon. Add toasted walnuts, washed rocket leaves and crumble the feta with your hands.

For the dressing in a small bowl take olive oil, add salt, pepper, balsamic vinegar and lemon juice mix well.

Pour the dressing over the salad and toss it lightly and serve chilled.
