Pimiento de Padrón

This one is a very common dish at all the restaurants in the Canary Islands. It's normally ordered with starters. These peppers are mostly sweet, you might come across a couple that are hot, but so far, I haven't had any hot ones. So you can either eat it on it's own or with any other starters that you've ordered or just with bread (they normally give a complementary bread basket).

Wash the pimientos and completely dry them.

Heat oil in a frying pan on medium flame. Deep fry the pimientos for 2-3 minutes. Remove them onto a plate lined with kitchen towel to drain any excess oil.

Line a serving plate with tomato slices. Place the fried pimientos on the tomatoes and sprinkle salt over it. Serve hot.
