#midnightI prefer to eat Mexican style scrambles eggs to silent my urge of midnight craving.It is the dish usually served in Mexico with refried beans, tortillas, and warm salsa. But i usually have it alone at midnight cravings or sometimes with warm tortilla depending upon hunger pangs.

Key is to whisk 90% of the time and to makse sure the pot doesn't get to hot to make really airy and creamy (without cream!) scrambled eggs. Definitely not as fast as scrambling eggs the traditional way, but truly decadent results!

It's special to me because everybody love my eggs and I would like to just give some recipes I know to people to help them cook better are teach other people better.

Best with tomato sauce (ketchup).

Very easy, yummy and good for a breakfast. Mayonnaise makes egg more fluffy.
