This noodle dish doesn't take too much time to prepare.
Cooking Instructions

Grill the ginger, half an onion, and a shallot over charcoal. Blanch the beef shank and pork trotters to remove impurities.

Place the grilled ginger, shallot, onion, pork bones, and beef shank in a pot. Add enough water to cover and simmer on the stove.

Once the pork bones and beef are cooked, remove them and place in a bowl of ice water. Set aside, while keeping the broth simmering on low heat.

To make the satay: finely chop the garlic, shallot, lemongrass, and chili. Heat the annatto oil in a pan, then add the garlic, shallot, lemongrass, and chili, and sauté until fragrant and golden.

Mix 3 teaspoons of shrimp paste with a little water, stir well, and strain to remove solids. Add the strained shrimp paste, prepared satay, and rock sugar to the broth. Continue to simmer until boiling. Season to taste.

Briefly dip the rice noodles in boiling water to heat, then place in a bowl. Arrange thinly sliced pork bones and beef shank on top, pour the broth over the noodles, and serve with fresh herbs.

This is similar to Bún Mắm Nước Lèo, which uses a couple different types of fermented fishes to make the broth, as well as a variety of different toppings (roasted pork, stuffed peppers fish cakes, squid, ect.). This is shortened and made a bit more simple with less toppings. The broth is almost identical, using (air) fried snake head fish (cá lóc) as the main topping and local pre fried fish cake for quick light work.
