A delicious breakfast to start the day! My daughter isn’t a fan of “green” veggies, so I came up with this simple twist on traditional egg pancakes by adding fresh scallions and rolling them up into a fun, easy-to-eat shape that kids love. You can enjoy them plain or with your favorite fillings. A filling, homemade breakfast that makes kids happy and gives them energy for the day.

Ingredients

Serves 3 servings
  • 1 cupall-purpose flour (about 120 grams)
  • 1/2 cupwhole wheat flour (about 60 grams)
  • 1/4 cupcornstarch (about 30 grams)
  • 3large eggs
  • 1 3/4 cupswater (about 415 ml)
  • 1 tablespoonvegetable oil
  • as neededChopped scallions,
  • Salt, to taste

    Gather all the ingredients.

    Wash the scallions, pat them dry, and finely chop them.

    Measure the flours and cornstarch into a bowl. Add a pinch of salt, 1 tablespoon vegetable oil, and the eggs. Mix well, then gradually add the water and stir until you have a smooth batter.

    Stir in the chopped scallions.

    Heat a nonstick skillet over medium heat and lightly grease it with oil. Stir the batter and pour some into the pan.

    Tilt the pan to spread the batter evenly into a large, thin pancake. Cook until set, then flip and cook the other side.

    Once cooked, use chopsticks to roll up the pancake into a log shape.

    The amount of batter you use will determine the thickness and size of the pancake rolls.

    Add your favorite sauces if you like—try black pepper, soy sauce, or ketchup.

    [Tips]
    * For the 1 3/4 cups water, start by adding 1 cup to the batter, then gradually add the rest as needed, depending on the flour’s absorbency.
    * If you like, you can add some corn kernels when rolling up the pancakes for extra flavor.
