Green Sauce
This time I used arugula.
Steps

I use a blender cup, but you can also use an immersion blender.

Add the soy-based dressing and fresh herbs. Use whichever herbs you like best. The amount is up to your taste, but use at least a small bunch of each.

Blend, then add salt, lemon juice, and vinegar, and mix well.

Finally, slowly drizzle in the sunflower oil while blending, just like making classic mayonnaise.

I use this tasty, light sauce as an appetizer (for tacos or bread tartlets), to go with cold rice or pasta, or as a spread for sandwiches and tea sandwiches.
