Melon and Cucumber Gazpacho

Cut the melon, removing the skin and seeds, along with the cucumbers.

Add the chopped Italian green pepper and the quarter onion.

Add the olive oil, salt, and vinegar to taste, and blend until smooth and without lumps. Ready to eat. You can add diced ham or a melon skewer if you like.

Chill in the refrigerator to make it cooler.
