Wash & peel papaya. Remove seeds & chop it in fine cubes.

In a big vessel, add water & bring it to boil. Once water starts boiling add papaya cubes & boil it for 3 minutes. Turn off the gas & let papaya cubes soaked in water for 5 minutes. After 5 minutes drain out blanched papaya.

Take sugar, add 3 cups water, cook until sugar dissolves completely. Add blanched papaya in that sugar syrup & cook until sugar syrup has one string consistency.

Turn of gas, add vanilla essence. Divide papaya cubes in 2-3 parts, as per your choice of desired colour. Add colour in it & keep it atleast 12-24 hours to get sweet and colour properly.

After 12-24 hours take out papaya pieces on wire net placing on some vessel so extra sugar syrup drains out.

Keep this pieces on wire net in air, until it becomes completely non sticky & dry. Store it in air tight container.
