  1. 1large bitter melon
  2. 2eggs

    Wash the bitter melon, trim the ends, and slice it. Heat a pan, sauté garlic until fragrant, then add the bitter melon and stir-fry evenly.

    When the bitter melon softens, add 2 tablespoons oyster sauce, a little sugar, and crack in 2 eggs. Beat the eggs and pour them into the pan. Stir everything together, then transfer to a plate and sprinkle with black pepper and chopped green onions.
