  • Peruvian Shredded chicken and cilantro sauce

    olive oil (plus more if needed) • medium onions, halved and thinly sliced • garlic, peeled and smashed • sweet potato peeled and diced (optional) • roughly chopped cilantro (more for garnish) • scallions diced (more for garnish) • limes, 1 halved, 1 into wedges for serving • cumin • dried oregano • salt (more to taste once chicken shredded) • pepper (more to taste once chicken shredded) • whole chicken, frozen is ok in a pinch •

  • Vegan Sag Paneer

    baby spinach • vegan butter • silken firm tofu • onion finely chopped • grated garlic • small hot pepper minced • piece of ginger, grated • ground coriander • ground cumin • coconut milk, well mixed (not light coconut milk) or another non sweetened vegan cream • Basmati or Jasmin rice and naan • Salt and pepper to taste

  • Baked Cod

    Icelandic cod • bread crumbs • unsalted butter, melted • Chopped chives • Chopped parsley • lemons • onion powder • garlic powder • Salt and pepper to taste

    mussels • bulb of garlic • olive oil • scallions finely chopped • dried Chili flakes • large plum tomatoes diced • white wine, save the rest to drink with dinner • packed flat leaf parsley chopped • Salt and Pepper to taste • Fresh baguette or sourdough • Butter
    • 30 minutes
    • 2-4 servings
  • Corned Beef and Cabbage

    2-3 lb raw corned beef • pickling spice (some corned beef come with it • good ginger beer 2 bottles of a good lager or similar beer • small red potatoes, cut in half if not tiny • I medium head of cabbage sliced into 2-3 inch wedges • Butter, salt pepper and whole grain mustard for serving

  • Chicken Brodo

    olive oil • onions, cut in half skin on (discard any parts with dirt) • bulb garlic, cut in half skin on (discard any parts with dirt) • carrots snapped in half • celery with leaves, snapped in half • herbs on hand plus 3 bay leaves • Chicken; the raw bones from a cut up chicken or bones from a roast chicken or a pack of bone in skin on thighs or drumsticks or a couple dozen raw wings • Sea salt and black pepper to taste
    • Prep 20 minutes Cook 3+ hours

    bone broth (brodo) or a low sodium boxed stock, beef broth or chicken stock or 8 cups homemade broth • White miso paste (any will do if you can’t find white) • Ramen noodles (fresh or dried) • Bokchoy (or spinach if you can’t find) • Scallions • Small piece of ginger • I bulb garlic • Shiitake Mushrooms (5 or more mushrooms) • Eggs (1 per bowl of ramen) • White sesame seeds • Soy Sauce • Nori (optional but nice) •
