Ingredients

30 minutes
  1. 1 lbIcelandic cod
  2. 1 cupbread crumbs
  3. 4 tbsunsalted butter, melted
  4. 4 tbsChopped chives
  5. 4 tbsChopped parsley
  6. 2lemons
  7. 1 tsponion powder
  8. 1 tspgarlic powder
  9. Salt and pepper to taste

Cooking Instructions

    Oven to 425

    Mix breadcrumbs, onion powder, garlic powder, chives, parsley, salt and pepper, half a lemons worth of zest and 3tbs of melted butter

    Place fish in baking dish or cast iron pan

  4. 4

    Toss cod in remaining 1 tbs of butter and salt and pepper fish, top with breadcrumb mix

  5. 5

    Cut remaining lemon in half and place aside fish in pan

  6. 6

    Bake 10-15 minutes depending on thickness. You know white fish is done with you insert a fork and the layers are “flakey” and pull apart.

    Serve with rice or roasted potatoes, plate with the roasted lemon

  8. 8

    Slice zested lemon and serve on table
