Congratulations Becky! It's a very common, traditional dish here in Greece in which we also add zucchini, potatoes and peppers of different colours. It's called 'Briam' and we always accompany it with delicious greek feta cheese 🇬🇷. Hugs from Greece 🤗🤗🤗
