Thank you for the recipe. This is a slight variant dish, @lindzi and me cooked it in our kitchen. After marinated the aubergine, we baked the in the oven for 20 mins, the realize it became a bit dry.
@lindzi prepared some sauce to make it even flavorful and moist to eat by adding pomegranate sauce, olive oil, black pepper, salt and garlic. It is very delicious 😋

I had a go at this in the air fryer the other day and it also started to dry out on the top during cooking. I had some glaze left so I brushed this over the top a couple of times during cooking. They were not dry at all once they'd cooked. Yum! Love this recipe.
