  1. 20Lumpia or Spring Rolls thin wrappers
  2. To make Lumpia skin(are thin paper-like skins, soft textured but
  3. they're strong enough to wrap&hold your fillings without breakin
  4. apart!
  5. In a big bowl put 250g All purpose flour.Dissolve 1/4 tsp salt w
  6. 400-450 mlwater, then pour the water into the flour
  7. bit by bit mix w/ hand till you have a stretchy batter

    Lumpia sheet:in a big bowl put flour.Dissolve 1/4 tsp salt in 409-450ml water, add bit by bit into the flour &mix with your hand till you have a thick batter. Remove dough. Cover w/damp cloth. To be continued see steps 6.

    How to work on the dough: then Pick up some batter from from the edge of the bowl & drop it into the center of the dough. Repeat the process a few more time&beat the batter with your hand for a few times (to develop glutein).Continue slapping the batter back on the bowl for about 10', until the texture is smooth & elastic (the elasticity needs to hold different Stuffing without breaking apart), the center batter hold together like a rope, form into a ball. Cover with glad wrap,let the batter 30'

    To make the wrapper:Heat up a large non-stick pan on a medium heat. Once the pan is hot, set the heat to low. Using one hand, scoop up the batter in your palm & rub onto the pan make a thin circular motion on the pan. As the sides of the wrapper begin to curl up use the other hand to peel off the wrapper. Place on a plate. Cover with a damp towel to keep moist. Repeat the process. Note: if the pan is too hot, the batter will not adhere to the pan.

    If you don't have a non-stick pan, then with a paper grease the pan. Re-grease it lightly for the next making wrapper again. But if you're using a non-stick pan then, you don't have to grease your pan.

    When the pan is perfectly heated take a handful of batter into your hand. This will be weird at the beginning but you will get the hang of it after a while. With the ball of batter in your hand, gently rub it into the pan then immediately removing any excess. Let it cool for a few seconds. When the edges start to curl, it's time to pick it up!

    Place it on a flat surface upside down (allowing the steam to cook the other side) and cover it with a cloth to prevent it from drying up. That's it!

    Note: If you're not using it right away, just cover them tightly with plastic wrap & leave it in the fridge ready for the following day. It's best if you use it the same day! Now we are ready to wrap & roll!
