Bahan-bahan

  1. 7 cupswater (1 cup = 240 ml)
  2. 7large dried anchovies, heads and guts removed
  3. 4ounch (115 grams) peeled bengkoang, sliced thinly
  4. 4ounch (115 grams) union, sliced thinly
  5. 1/2ounch (15 grams) dried kelp
  6. 1 1/4 tspkosher salt

Cara Membuat

  1. 1

    In a pan, bring the water to a boil. Add radish, onion, dried kelp, and anchovies. Boil for 20 minutes over medium high heat until the bengkoang turns translucent.

  2. 2

    Strain over a bowl. You need 4½ cups of stock, so if you have less than that make up the difference with water.

  3. 3

    Put the stock into the pan and stir in 1¼ teaspoon kosher salt. Set aside for later.
