Garganelli con speck, finferli e zafferano

My favourite mushrooms again in another delicious yet simple pasta. Garganelli is what is known here as a speciality pasta. It is made with egg and has a different texture to normal pasta. Goes great with this sauce! #italian #pasta #dinner #mainmeal

Ingredients

20 mins
4 servings
  1. 400 ggarganelli
  2. Packetspeck, about 70 g
  3. 200 gchanterelle mushrooms, cleaned and chopped
  4. Small chopped shallot
  5. Few strands of saffron
  6. Glug of white wine
  7. Fresh parsley
  8. Olive oil
  9. to tasteSalt

Cooking Instructions

  1. 1

    Bring a large pot of salted water to the boil and cook pasta according to instructions. Cook onions gently in olive oil. When soft, add mushrooms, stir and turn up the heat

    After 2-3 mins, add the speck and then the saffron. At this point it should be bubbling, add the wine and let it evaporate. Right at the end add a ladle of pasta cooking water and parsley

    Drain pasta al dente. Add to sauce, mix and serve. Add parmesan if you fancy

So tasty! I actually bought the equipment and have made homemade garganelli in a mushroom and pancetta
