Asparagus is one of my favourite vegetables and Jack also loves it - the other 3 in the house not so much but hey, more for us!

Asparagus is one of my favourite vegetables and Jack also loves it - the other 3 in the house not so much but hey, more for us!
Cooking Instructions

Preheat the oven to gas 6 / 200C / 400F and ready a roasting tray

Add 1 tbsp of the oil to a large pan and gently cook the onions until translucent, about 5 minutes

Add the garlic and potatoes and cook for 3 minutes before adding in the vegetable stock. Bring to the boil then simmer for 15 minutes until the potatoes are well cooked

Meanwhile, toss the asparagus on the tray with 1 tbsp of the oil and season with a little salt and pepper. Roast for 15 minutes

When the asparagus is done, add it to the pan with the lemon juice and half of the milk
- 6
Use a blender to puree the whole lot smooth and add more milk in until you reach your desired consistency

Serve topped with the sliced chives, chilli flakes, fresh black pepper, a slice of lemon and some crusty bread

The supermarkets here always have the 5 main pre-packed vegetables going very cheap the week everyone is buying their Christmas dinner accompaniments. I got sprouts, parsnips, carrots, potatoes and onions for 15p a bag at Tesco, apparently Asdas were even cheaper! A lot of people dislike sprouts but we eat them all year round. Some people like to pair them with bacon or chestnuts at Christmas and you could certainly use ham stock if you like in this if you want to tone the sprout flavour down. I opt for half and half chicken / vegetable stock and you can add extra water depending on how thick you prefer your soup. Looks like the heatwave is over and we're back to our normal Scottish weather! Jack announced it must be a soup day so why not a traditional tattie soup? Cocoa bombs are very popular this year! I think it's the year for homemade Christmas hamper gifts! You can add in lots of optional extras such as crushed peppermint candy canes, Christmas themed sugar sprinkles, edible glitter etc. This recipe is based on 5 servings of 250ml of milk (Just over 1 cup) so please adjust the cocoa amounts to your milk quantity as stated on the cocoa powder packaging.
