Ingredients

  3. 200 gflour
  4. 2 tbspsugar
  5. 1 tspyeast
  6. 1 tspsalt
  7. 1/3 cupwarm milk
  8. 30 gwarm butter
  9. 1 tspmayonnaise
  10. Sauce
  11. 1/2 cantomato purée
  12. 3 tbspvegetable oil
  13. 15garlic cloves
  14. 1onion
  15. 1/2 tsporegano
  16. 1/2 tspbasil
  17. 1 tspchili flakes
  18. 1 tspsalt
  19. 1/2 tspsugar
  20. 1/2 tsppaprika
  21. 3 tbspketchup

Cooking Instructions

    DOUGH: Whisk egg into a froth. Add 2 tbsp of sugar and 1 tsp yeast. Mix. Add 200g of flour and the 1 tsp salt. Mix with warm milk (1/3 cup) and knead together for dough, first with ladle and then with hands. The dough will be sticky.

    DOUGH: Knead 1/2 tbsp mayo into dough, and then 30g of butter. Knead for 5-10 minutes. Leave in warm place to rise for 1-2 hours.

    SAUCE: Heat a pan with 3 tbsp oil. When hot, add 15 garlic (chopped) and the onion (chopped finely). Cook for two minutes. Add in 1/2 tsp oregano, 1/2 tsp basil, and 1 tsp chili flakes—mix and cook for another minute.

    SAUCE: Add tomato purée to the pan and 1 tsp salt. Mix well. Cover the pan and cook for five minutes. Allow the liquid to boil out for 10-15 minutes on low heat.

    SAUCE: Add the 1/2 tsp sugar and the 1/2 tsp paprika once the sauce is well cooked, and then turn to medium to cook for 4 minutes..

    SAUCE: Add 3 tbsp ketchup and mix for 2-3 minutes. Let sauce cool down completely before putting it in the blender to grind to a fine paste.

    TOPPINGS: Anything goes! The world is your oyster.

    For the stuffed crust, roll out the dough and place thin slices of cheese along the edges. Fold over the excess dough. Be sure to seal it by pinching otherwise the cheese will escape!
