預備食材

  1. 茄子eggplants 2 條
  2. 蒜頭garlic 2 顆
  3. 薑ginger 數片
  4. 白芝麻sesame 適量
  5. 調味
  6. 味醂mirin 1 湯匙
  7. 鰹魚醬油Japanese fish sauce 1 湯匙
  8. 糖sugar 1大茶匙
  9. 豉miso 1 湯匙

料理步驟

    1.紫色皮向下,下油與薑蒜一起煎
    the purple skins should face down, pan fried with garlic and ginger
    2.拌勻醬汁,加入水(比例大概是醬汁1:水2份)mix the sauce, add some water and the ratio is around 1:2
    3.醬汁分三次下,以中火煮
    add the sauce in 3 times under medium heat
    4.第二次時,可以翻另一面
    turn over the eggplants when adding sauce the second time

    5.如果第三次茄子仍然未熟透,可以再加點水再煮一下。上碟時灑下芝麻
    if the eggplants are still undercooked after the third time, add some more water. Sprinkle sesame for plating
