Got a similar recipe off Facebook. Instead of milk I used cream of coconut. THE EASIEST PIE EVERRR. Probably the best coconut pie I’ve ever made.

This pie is so easy to make. Just blend and bake.

This desert is called 'impossible' cos, while a runny mixture is poured into the cake pan, it is a 3-layered-pie that emerges from the oven. The bottom layer is pastry - like cos the flour and butter sink in the bottom; centre layer is like custard filling; top is slightly browned and crusty because the coconut floats to the top during baking.

To make it totally dairy free, use coconut oil instead of butter. I used unrefined for more coconut flavor.
