Ingredients

  1. 3 cupHalf and Half
  2. 2Eggs
  3. 3/4 cupWhite Sugar
  4. 1/2 cupAll Purpose Flour
  5. 1/4 tspSalt
  6. 1 cupFlaked Coconut, Toasted
  7. 1 tspVanilla Extract
  8. 19 inch Pie Shell, Baked
  9. 1 cupWhipped Topping

Cooking Instructions

    In a medium saucepan add the first 5 ingredients.

    Bring to a boil stirring constantly

  3. 3

    Remove from heat and add 3/4 cup of the coconut and the vanilla extract.

  4. 4

    Pour into the pie shell and chill for 2 to 4 hours.

  5. 5

    Top with whipped topping and the remaining 1/4 cup of coconut.

  6. 6

    * To toast coconut spread in a ungreased pan and bake at 350°F for 5 to 7 minutes stirring often.
