Fried Green Beans with Ham & Radish Greens

I recently went to a local farmer's market and acquired fresh locally grown green beans & radishes. I also recently acquired the knowledge that you can eat radish leaves! 😏 They are actually very nutritious and are similar to using spinach, kale, or any other greens. I had a few slices of ham left and figured why not throw it all together! 🤷🏻‍♀️👍 I accidentally used too much oil so this was a bit greasy this time but was still very yummy. It was gone before half the family could even get any and I had a few angry children that they'd missed out! 🤦🏻‍♀️😂 Next time I will definitely have to double the recipe for my large family! 👌 This makes a great side dish or appetizer, and even a delicious main course as well. 👏🤤

Ingredients

2-4 servings
  1. 1 lbfresh green beans
  2. 1 cupmixed bell peppers, chopped
  3. 1small yellow onion, chopped
  4. 1medium clove garlic, chopped
  5. 1-2 cupsradish greens
  6. 1 cupham, thin sliced strips (about 6 pieces deli sliced)
  7. 1 tbspoil
  8. 1 tspsalt
  9. 1 tsppepper
  10. 1 tsponion powder
  11. 1 tspgarlic salt
  12. 1 tbspdried parsley
  13. 1/2 cupgrated parmesan cheese
  14. 1/2 cupshredded mozzarella or any preferred cheese

Cooking Instructions

    Begin to heat oil in a large frying pan over medium heat. Meanwhile, prepare ingredients. Clean green beans & remove stems, chop peppers, garlic, & onion, and wash radish greens. Slice ham.

    Then, begin to saute all vegetables, garlic, & greens for 5-6 minutes. Add seasonings and saute for 2-3 mins more.

    Next, add ham strips and continue to saute for 6-10 minutes more or until ham and vegetables are done to preference.

    Finally, add parmesan and toss lightly into mixture. Saute for 1-2 minutes more. Then remove from heat and top with shredded mozzarella cheese.

    Serve & Enjoy!
