Spicy Smashed Cucumber

I thought about the Dan Dan noodle sauce and thought about what else I could have it with, with a few extra additions to taste. Was pleased with the result! Made in the Cookpad Kitchen!
Cooking Instructions

Smash the cucumbers with a rolling pin and some parchment paper or a tea towel. Then roughly chop into bite size pieces.

Next chop your spring onions and add them to the cucumbers

Add the Tahini, Soy Sauce, Hot water, Chilli oils and Siracha to a bowl and whisk to form a sauce, add more hot water if it is too thick. You want the sauce nice and spicy as the cucumber will cut through the spice. Keep tasting the sauce and add more chilli oil to taste

Add to the cucumber bowl and toss well. Serve. We served it with Halloumi and some extra chilli oil and sesame seeds.

I was able to survive 7 years of making bentos for my children with this mix. Frozen goma-ae (cooked vegetables with sesame sauce) becomes wet by the time it thaws, and the flavors dissipate so it's no good! This sesame-sauce base is perfect for families with those kinds of problems.I'd always made this by eyeballing the ingredients, but I tried measuring things out properly this time. And what do you know - the ratio is quite easy to remember. This mixture is on the sweet side, so please use this as a starting point and adjust the amount of soy sauce and sugar. It has almost no moisture in it, so if you put it in a container with a hermetically sealed lid or a jar with a a screwtop lid, you can even store it at room temperature.
