Ingredients

  1. 1 packageitalian sausage (5 links) - spicy optional
  2. 2medium yellow onions, chopped
  3. 4 clovesgarlic, minced
  4. 4 stalkscelery, chopped
  5. 4carrots, chopped
  6. 8 cupsvegetable broth
  7. 1-28 ozcan of crushed tomatoes
  8. 2zucchinis, quartered and slices
  9. 2yellow squash, quartered and sliced
  10. 1/2 lbmushrooms, sliced
  11. 2medium fresh vine tomatoes, chopped
  12. 1 bagfresh spinach, roughly chopped
  13. 2 tbsfresh basil, sliced
  14. 1-lb fresh tortellini
  15. Salt and pepper, optional
  16. Red pepper flake, optional

Cooking Instructions

    In a large stock pot, take italian sausage out of the casing, cut and "ball" into bite size pieces and brown the sausage. Add onion and garlic, cook until softened. Add celery and carrots, cook for about 10 minutes on medium-high.

    Add the broth, crushed tomatoes, fresh tomatoes, and basil. Bring to a simmer. Add in zucchini, yellow squash, and mushrooms. At this stage also add the spinach but don't stir in, place on top. Bring to simmer. Add tortellini on top, and follow cooking directions on package.
